Port of Leith Pedro Ximenez Sherry

Crafted exclusively for us by Bodegas Baron in South West Spain, Pedro Ximénez (or PX) takes its name from the white grapes that form the base of this exquisite wine. Following harvest, the luscious fruit is carefully laid out on mats and sun-dried, allowing the water to evaporate and the grapes to naturally ‘raisin,’ intensifying the sugars. The pressed grapes yield a syrupy juice, known as grape must, which undergoes fermentation and matures in a solera. This versatile wine, cherished by mixologists globally, pairs perfectly with cheeses and desserts, making it a delightful choice for a variety of occasions.
