Known as the ‘Champagne’ of honeys, this is our signatory honey of Scotland, won from wild-flowering purple Ling heather (Calluna vulgaris ) in the Scottish Highlands between July and September of each year. An intense, warm, floral aroma, with an assertive palate and full-bodied malty finish – its distinctive flavour is renowned amongst enthusiasts. Highly prized for its health benefits, research has found it to be just as effective as Manuka Active 10+ in terms of its antimicrobial activity.
Honey's antimicrobial activity is measure by the term 'Total Activity'. The higher the TA score, the greater the antimicrobial strength. Honeys with a TA of 10+ or more are considered to have substantial antimicrobial properties.
Use as a glaze for pork, ham, game, poultry, salmon and trout, and also in cakes, bread and ice cream. Pair with Stilton, Cheddar, Scottish Crowdie or a semi-aged Goat's Cheese.
